  1. Bake the squid on a charcoal or gas stove until you smell the aroma. Grill until cooked evenly on both sides. Pack the squid in a sheet of paper and use a heavy object to soften it, then tear the piece to taste.
  2. Make the sweet and sour sauce: pineapple juice, sugar, chutney, ketchup, oyster sauce, fish sauce.
  3. Simmer squid with sauce and paprika until thickened. Season to taste, if not sour then add tamarind or vinegar to taste.
  4. When the squid is dry, mix the roasted sesame seeds.
