Instructions
  1. Bring a large pot of salted water to a boil. Add the spaghetti or linguine pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to brown the garlic.
  3. Gently add the fresh sea urchin roe to the skillet with the garlic and butter. Use a wooden spoon to break up the uni and stir it into the butter until it forms a creamy sauce.
  4. Pour the heavy cream into the skillet with the uni sauce and stir until well combined. Season with salt and freshly ground black pepper to taste. Toss the cooked pasta into the skillet with the uni sauce. Gently toss the pasta in the sauce until it is evenly coated. If the sauce is too thick, you can add a splash of reserved pasta water to loosen it up.
  5. Divide the uni pasta among serving plates. Garnish with chopped fresh parsley and grated Parmesan cheese, if desired. Serve immediately and enjoy!
