Tear the soak dried bamboo shoots into small pieces. Then boil 2-3 times and drain. Cut or slice carrots.
Stir the bamboo shoots with seasoning to taste for about 10 minutes.
Add water and carrots to cook with the bamboo shoots. Simmer for 15-20 minutes with the low heat. Then, put shiitake to cook for another 5 minutes. Add seasoning to taste.
Finally, sprinkle some chopped cilantro and scoop the soup in a bowl.
