- 500 gr Pork ribs
- 4 slices Ginger
- 4 cloves garlic
- 1 tablespoon White sesame
- 1 teaspoons Green onions
- 2 branch Salt
- 1 tablespoon Shaoxing rice wine
- 2 tablespoons Fish sauce
- 1 tablespoon Vinegar
- 1 tablespoon Cooking oil
- 3 tablespoons Alum

- Step 1: Wash and cut pork ribs into small pieces. Boil water, drop 2 pieces of ginger and ribs to blanch, then remove and cool down. Pour oil, alum and a little water into the pot, heat until the sugar liquid turns brownish yellow (simmer in low heat to prevent burning the sugar liquid). Put the ribs into the boiling sugar pot, add the water and stir. Add ginger, onion, garlic, and water to the pot. (Note: water should not be over the ribs.)
- Step 2: Boil for a while, then add wine, salt, fish sauce, and vinegar. Season to taste. Lower the heat until the ribs are ripe, the sauce is thick, then turn off the stove, pour into the plate. Sprinkle roasted white sesame on top to make the dish more attractive.
