Instructions
Material preparation:
  1. Chop the ribs into bite-sized pieces, then soak in the water with a little salt, blanch the ribs through boiling water, then wash again. Boil and peel the quail eggs. Slice shallots in half, chop cilantro.

  2. Slice and cook pumpkin until it is soft, then crush. Keep the pumpkin broth in the pot.

Making rice noodles:
  1. Put two types of flour in a bowl with crushed pumpkin. Mix the flour and pumpkin well, then slowly pour the pumpkin broth into the mixture to knead (the broth must be still hot) until the dough is smooth, let it rest for 10 minutes.

  2. If you have a noodle maker, you can put the dough in the machine and press the mixture into the pot of boiling water. The cooked noodles will float in the water. Then, soak them in cold water for 2 minutes and put into a bowl to mix with oil. Continue to do so until the dough is over (if there is no noodle maker, you can roll the dough, then cut and boil the noodles)

Cooking the broth:
  1. Add ribs + 1 liter of water to the pot with shallot & 1 teaspoon of salt to cook with medium heat for about 20 minutes.

  2. Season the broth with two teaspoons of seasoning, one teaspoon of rock sugar (according to your taste).

Complete the dish:
  1. Put the rice noodles in a bowl with ribs & quail eggs, sprinkle with some cilantro, and pepper (optional). The rice noodles soup with beautiful golden noodles without the strong smell of pumpkin and soft aromatic meat as well as quail eggs will fancy all family members, even small children.
