Rice paper" is a very typical ingredient of famous Vietnamese Pork Rice paper roll. Besides, we can use mustard green leaves to roll this dish.
The pungent spiciness of mustard green helping to reduce the fat of meat together with the sweet & sour fish sauce will give us a perfect taste.

- 300 gr bacon with less fat
- 300 gr fresh shrimp
- 1 bunch mustard green
- 1 teaspoon Salt
- (If dry, boil or stream, or can be replaced with noodles) Fresh or dry Banh Hoi
- Carrots

- -Step 1: Wash the meat and shave off the dirt on the skin. Boil the meat for 5 minutes, then remove the meat and wash again. Now, put water to another pot with vinegar, salt, lemongrass, and the meat. Cook on medium heat.
- - Step 2: Boil the meat for 15-20 minutes until cooked. (Cooking time depends on how large is the meat). Avoid overcooking the meat.
- -Step 3: After removing the meat, soak it in cold ice water for 2 minutes before slicing.
- -Step 4: Wash shrimp. Then steam or boil. Cut off the middle tendon of mustard green leaves, and rinse.
- -Step 5: Grate carrots. Slice cucumbers. Blanch chives through boiling water.
- -Step 6: Spread the mustard green leaves on the plate, arrange Banh Hoi, meat, herbs, and carrots in. Gently roll, then use chives to tie the rolls attached with the shrimp in the middle.
- -Step 7: Place the rolls in a plate. Serve with sweet and sour chili fish sauce.
- *Sweet and sour chili sauce: Dissolve a combination of 2 tablespoons fish sauce, 1 tablespoon vinegar, 2 tablespoons white sugar, 1 tablespoon lemon juice and 15 tablespoons: water. Then add 1 tablespoon chili, minced garlic and stir well.
